How to reheat takeout properly without ruining what you paid for

Most reheated takeout fails not because the food was bad, but because the reheating method ignored what the food is made of. A braised lamb shank and a piece of fried chicken are structurally opposite things, and treating them identically — thirty seconds in a microwave, full power — produces predictably bad results. This guide works through four of the most common takeout formats, with specific temperatures and methods drawn from what food science actually tells us about protein, starch, and moisture behaviour under heat. No guesswork, no vague "heat until warm." The goal is to get as close as possible to the texture you paid for the first time around.

Why reheating fails: the short physics lesson

The core problem is that different components of a dish respond to heat at different rates. Proteins tighten and expel moisture above roughly 70°C. Starches — the coating on fried chicken, the crumb of a flatbread — re-gelatinise under steam, turning from crisp to soft. Fat, which acts as a lubricant in braised dishes, can separate when heated unevenly. A microwave on full power hits the centre of a dense piece of meat hard while barely touching the outside, which is the opposite of what a controlled oven does.

The practical upshot is that 'low and slow' tends to preserve texture for protein-heavy dishes, while high, dry, fast heat is what rescues anything meant to be crisp. These two principles are in direct tension with each other, which is why a mixed takeout bag — soup plus fried chicken plus bread — almost always needs to be split across two or three reheating methods rather than one.

Braised dishes: low oven, covered, with a splash of liquid

Braises — slow-cooked curries, stews, braised short ribs, any dish where meat has been cooked in its own sauce for an extended period — are actually the most forgiving format to reheat, with one condition: they need moisture and they need an even, moderate heat. Transfer the dish to an oven-safe container, add two or three tablespoons of water or stock to the surface, cover tightly with foil, and heat at 160°C for 20 to 25 minutes depending on portion size. The foil traps steam, which prevents the sauce from reducing further and the meat from drying out.

The microwave is acceptable here, but only at 50 to 60 percent power, in two-minute bursts, stirring between each. Full-power microwaving of a braise causes the sauce to boil before the meat is warm, which toughens the outer fibres and makes the sauce watery as proteins push out liquid rapidly. The oven method consistently produces a more even result, and the 25-minute investment is worth it for a dish that originally took two hours to make.

The microwave is not the enemy — full power is.

Fried chicken: the oven rack is the only serious answer

Fried chicken is the hardest takeout format to reheat well because its appeal is almost entirely textural — the contrast between a dry, shatteringly crisp crust and moist interior meat. Steam is the enemy of that crust. A microwave introduces steam from the meat's own moisture; wrapping in foil does the same. The method that works is placing the pieces directly on a wire rack set over a baking tray, uncovered, and heating at 200°C for 12 to 15 minutes. The rack allows hot air to circulate underneath, which is what keeps the base of the coating from becoming soggy.

Pieces straight from the refrigerator will need closer to 15 minutes; if the chicken has been sitting at room temperature for 20 minutes first, 12 minutes is usually enough. Check that the internal temperature reaches 74°C — the same standard used for initial cooking. An instant-read thermometer is worth the small investment if fried items are a regular part of your takeout rotation. Avoid the air fryer if pieces are crumbed rather than battered, as the fan can strip loose crumbing off the surface.

Flatbreads and wraps: a dry pan in two minutes

Flatbreads — naan, roti, pita, flour tortillas — stale quickly because their starch structure firms as it cools. The microwave turns them gummy because it introduces moisture without evaporating it. The correct tool is a dry frying pan over medium-high heat, 30 to 45 seconds per side with no oil added. The direct contact with a hot surface drives off surface moisture while warming the interior, recovering something close to the original texture.

For flatbreads that came as part of a wrap or filled roll, the filling complicates things. Separate the filling if possible, reheat the bread in the pan, and warm any protein filling separately in a covered pan with a dash of water. If the wrap cannot be disassembled — a sealed burrito-style wrap, for instance — a brief spell in a sandwich press at medium heat works better than a microwave, because the press applies contact heat from both sides without steaming the bread from within.

Soups and broths: the stovetop every time

Soups are the easiest category. Transfer to a small saucepan, heat over medium flame, and stir periodically until you see a full, rolling simmer across the surface — not just bubbles at the edge. That visible simmer confirms the liquid has reached approximately 90°C throughout, which is the standard for safe reheating of any liquid-based dish. Do not microwave soups in their original plastic containers unless the container is explicitly marked microwave-safe; many takeout containers are not, and some plastics leach compounds into hot liquid.

The one complication is noodle or dumpling soups. If the noodles sat in broth overnight, they will have absorbed a large portion of the liquid and will be very soft. Reheating at a rolling simmer risks disintegrating them further. Here, add a splash of fresh water or stock before heating, and pull the pan off the heat as soon as the broth simmers — don't hold it at heat for more than 90 seconds once it reaches temperature.
