Fiona Dunmore opened Takeout Sev in the spring of 2019 after spending six years working in restaurant kitchens, the last three of which were in a busy brasserie where she ran the hot section. She'd noticed something that bothered her: the food that left the kitchen looking good often arrived at the table looking like it had been through a minor accident. When she started thinking about her own place, she decided the whole operation would be built around food that travels. The name came from a running joke with her brother about the seventh attempt at a perfect takeout box design.
The first year was a learning curve. The original menu had twenty-two items, which was too many for a two-person kitchen. By the end of 2019, Fiona had cut it to fourteen and the quality went up noticeably. The kitchen settled into a rhythm, the regulars started appearing, and word spread mostly through people recommending Takeout Sev to colleagues who needed a reliable lunch. A local office block about a ten-minute walk away became a steady source of phone-ahead orders, and that relationship shaped how the phone ordering system was refined over time.
