The Menu
Slow-Braised Beef Box
#001

Slow-Braised Beef Box

Beef shin braised for four hours in a dark stock with bay and black pepper, served over steamed jasmine rice with a small pot of braising liquor on the side. The liquor is the part people ask about most.

£11.50
Crispy Chicken Thighs
#002

Crispy Chicken Thighs

Bone-in thighs marinated overnight in buttermilk and smoked paprika, fried to order and packed in a vented box to keep the skin from going soft. Two thighs per portion, with a side of pickled slaw.

£10.00
Roasted Vegetable Tray
#003

Roasted Vegetable Tray

Seasonal vegetables roasted at high heat with olive oil and za'atar, served with a tahini dressing in a separate pot. The vegetables change with what's available, but there's always something substantial in the mix.

£8.50
Spiced Lamb Flatbread
#004

Spiced Lamb Flatbread

Minced lamb with cumin, coriander, and a little chilli, spread on a flatbread and cooked in the oven until the edges crisp up. Comes with a small pot of yoghurt and a handful of fresh herbs.

£9.00
Tomato and Lentil Soup
#005

Tomato and Lentil Soup

A thick soup made from red lentils, tinned tomatoes, and a base of fried onion and garlic. Double-bagged as standard. It travels well and reheats well, which is why it's been on the menu since the beginning.

£5.50
Garlic Rice (side)
#006

Garlic Rice (side)

Jasmine rice cooked with a garlic-infused oil and finished with a small amount of butter. A side that works with almost everything on the menu and is the most frequently added item to phone-ahead orders.

£3.00

Braised beef shin: why the cut matters and what four hours actually does

Walk into any decent butcher in the country on a cold Tuesday morning and the shin will be sitting there, usually the cheapest thing behind the glass, often ignored in favour of brisket or short rib. That neglect is doing a lot of quiet harm to a lot of weeknight dinners. Beef shin is not merely a budget-friendly alternative to more glamorous cuts — it is, structurally, the cut most precisely suited to long, low, wet cooking. Understanding why means getting into the anatomy of a working muscle, the chemistry of collagen, and the surprisingly underrated question of what happens to the liquid left in the pot once the meat comes out. The short answer is that the braising liquor is not a byproduct; it is the product. The longer answer takes four hours and a Dutch oven.

Buttermilk and smoked paprika: what the marinade does to chicken overnight

Last November, standing over a sheet tray at the end of a long prep shift, I pulled a batch of thighs out of a 24-hour buttermilk soak and noticed the flesh had turned almost white at the edges, and that the texture under my fingers felt nothing like raw chicken. That moment sent me down a rabbit hole I am still not entirely out of. Most recipe writing treats buttermilk marinades as a background heuristic — "it tenderizes, trust us" — without accounting for what is actually happening at the protein level, or why smoked paprika behaves differently from, say, cayenne in the same bath. This article tries to close that gap, using what food-science literature and some controlled kitchen tests at Takeout Sev can tell us about each component and what happens when time is added to the equation.

How to reheat takeout properly without ruining what you paid for

Most reheated takeout fails not because the food was bad, but because the reheating method ignored what the food is made of. A braised lamb shank and a piece of fried chicken are structurally opposite things, and treating them identically — thirty seconds in a microwave, full power — produces predictably bad results. This guide works through four of the most common takeout formats, with specific temperatures and methods drawn from what food science actually tells us about protein, starch, and moisture behaviour under heat. No guesswork, no vague "heat until warm." The goal is to get as close as possible to the texture you paid for the first time around.

Why people keep coming back

Packed for the journey

Every order is boxed so the sauce stays with the food, not the bag. We use vented lids on anything hot and crispy, and we double-bag soups without being asked.

Portions that make sense

We don't do tiny plates. A main here feeds a hungry adult. If you want to share, order one extra side and you'll be fine.

A menu that doesn't change every week

The core menu has been stable since 2021. Specials rotate, but you can rely on the regulars being there when you need them.

Made fresh, not reheated

Nothing sits under a lamp. Orders go out within about twelve minutes of being placed, and we'd rather make you wait a little than hand you something tired.

Quick quiz

What kind of order are you placing?

Answer three questions and we'll point you to the right part of the menu and the best way to order.

How many people are you ordering for?

When do you want to collect?

What are you in the mood for?

Here is where to start

Based on your answers, the full menu is the best place to look. If you're ordering for a group of ten or more, email hello@takeoutsev.com with your date and numbers and Fiona will come back to you within one business day. For everything else, a phone call or a walk-in works fine.

Who does the work

Fiona Dunmore
Fiona Dunmore
Founder, Established since 2019

Fiona Dunmore spent six years in professional kitchens before opening Takeout Sev in 2019, including three years running the hot section at a brasserie in the city centre. She trained in classical technique but became more interested in the logistics of food than the theatre of it. Her work has been mentioned in a regional food newsletter and a local business feature on independent restaurants. Outside the kitchen, she follows competitive rowing and keeps a small allotment where she grows herbs she occasionally uses in the specials. She still works the line most days and handles all catering enquiries personally.

FAQ

Common questions

Q01

Can I pay by card or do you only take cash?

We take card, contactless, and cash. Apple Pay and Google Pay work at the counter too. We don't have a card minimum, so you can pay by card for a single side dish if you want.

Q02

How far in advance do I need to call for a phone-ahead order?

Twenty minutes is usually enough during the week. On Friday evenings we get busy from about 6pm, so thirty minutes is safer then. For anything more than five or six items, call a bit earlier and we'll give you a realistic time.
